Keto bacon wrapped jalapeño poppers

Ingredients

  • 1/2 cup plain cream cheese, softened
  • 2 tablespoons Philadelphia jalapeño cream cheese (optional but adds more flavour)
  • 30 grams Cracker Barrel Medium cheddar cheese (or how much/how little you’d like)
  • 6 jalapeños
  • 6 slices of bacon

Directions

  • preheat oven to 400F
  • cut jalapeños in half, clean out seeds and hollow up
  • to softened plain cream cheese, add cheddar, jalapeño cream cheese and whatever cheeses you desire
  • mix cheeses
  • use a spoon to fill each hollow jalapeño
  • cut bacon strips in half (or leave whole and use more bacon if you like) – they stretch a bit and fit each jalapeño half perfect
  • wrap each 1/2 slice of bacon around the stuffed jalapeño. Use a toothpick to secure it if you like (I recommend)
  • place on a baking sheet lined with tinfoil
  • put it oven to 15-20 mins. Broil for the last 2 mins on high if you want crispier/browned cheese
  • place on a plate lined w/ a paper towel to get some grease off
  • serve and enjoy!

I’m drunk so I’m not sure the macros (served these at a part tonight lol). I’ll get back to you on that. I think slightly less than 1 net carb per delicious jalapeño popper. A perfect appetizer or side dish or munchie!
