Instructions:
- In a bowl, combine the shrimp and Cajun seasoning. Toss until the shrimp is well coated.
- In a large skillet, heat the olive oil over medium-high heat. Add the sausage slices and cook until browned.
- Remove the sausage from the skillet and set aside.
- In the same skillet, add the onion, bell pepper, and garlic. Sauté until the vegetables are softened.
- Add the diced tomatoes, dried thyme, dried oregano, paprika, salt, and pepper to the skillet. Stir well to combine.
- Bring the mixture to a simmer and let it cook for about 5 minutes to allow the flavors to meld.
- Add the seasoned shrimp and cooked sausage back into the skillet. Cook for an additional 3-4 minutes or until the shrimp are pink and cooked through.
- Remove from heat and garnish with fresh parsley.
- Serve the Cajun Shrimp and Sausage Skillet hot with rice, pasta, or crusty bread.
