Cannoli Recipe:

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, cold and cubed
  • 1/2 cup dry white wine
  • Vegetable oil, for frying
  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • Powdered sugar, for dusting

Instructions:

  1. In a mixing bowl, combine the flour, granulated sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add the white wine and mix until the dough comes together. Knead the dough on a lightly floured surface until smooth. Cover with plastic wrap and let it rest for 30 minutes.
  3. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  4. Roll out the dough into a thin sheet and cut it into circles using a round cookie cutter or glass. Wrap each circle of dough around a cannoli tube, sealing the edges with a bit of water.
  5. Carefully place the cannoli tubes into the hot oil and fry until golden brown, about 2-3 minutes. Remove them from the oil using tongs and let them cool on a wire rack.
  6. In a separate bowl, mix the ricotta cheese, powdered sugar, and vanilla extract until well combined. Stir in the mini chocolate chips.
  7. Once the cannoli shells have cooled, gently slide them off the tubes. Fill a piping bag fitted with a star tip with the ricotta mixture and pipe it into both ends of the cannoli shells.
  8. Dust the filled cannoli with powdered sugar before serving.
