Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter, cold and cubed
- 1/2 cup dry white wine
- Vegetable oil, for frying
- 1 cup ricotta cheese
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup mini chocolate chips
- Powdered sugar, for dusting
Instructions:
- In a mixing bowl, combine the flour, granulated sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
- Gradually add the white wine and mix until the dough comes together. Knead the dough on a lightly floured surface until smooth. Cover with plastic wrap and let it rest for 30 minutes.
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Roll out the dough into a thin sheet and cut it into circles using a round cookie cutter or glass. Wrap each circle of dough around a cannoli tube, sealing the edges with a bit of water.
- Carefully place the cannoli tubes into the hot oil and fry until golden brown, about 2-3 minutes. Remove them from the oil using tongs and let them cool on a wire rack.
- In a separate bowl, mix the ricotta cheese, powdered sugar, and vanilla extract until well combined. Stir in the mini chocolate chips.
- Once the cannoli shells have cooled, gently slide them off the tubes. Fill a piping bag fitted with a star tip with the ricotta mixture and pipe it into both ends of the cannoli shells.
- Dust the filled cannoli with powdered sugar before serving.
