keto carrot cake with almond flour

Ingredients:

For the cake:

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 cup erythritol or your preferred keto-friendly sweetener
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)

For the cream cheese frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/3 cup powdered erythritol or your preferred keto-friendly powdered sweetener
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a large mixing bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg until well combined.
  3. In a separate bowl, whisk the eggs, melted butter, melted coconut oil, and vanilla extract together.
  4. Add the wet ingredients to the dry ingredients and mix until a smooth batter forms.
  5. Fold in the grated carrots and chopped nuts (if using) into the batter.
  6. Pour the batter into the prepared cake pan and spread it evenly.
  7. Bake the cake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Once the cake is done baking, remove it from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  9. While the cake is cooling, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese, softened butter, powdered erythritol, and vanilla extract until smooth and creamy.
  10. Once the cake has cooled completely, spread the cream cheese frosting over the top and sides of the cake.
  11. Optionally, garnish the cake with additional chopped nuts or shredded carrots.
  12. Slice and serve the keto carrot cake, and enjoy your delicious, low-carb treat!
