KETO DEEP DISH MEAT LASAGNA

Ingredients:

For the “Noodles”:

  • 1 large cauliflower head
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

For the Filling:

  • 1 lb ground beef
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup low-carb marinara sauce
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the cauliflower into florets and place them in a food processor. Pulse until it reaches a rice-like consistency.
  3. In a microwave-safe bowl, steam the riced cauliflower for about 5 minutes, then let it cool slightly.
  4. Transfer the cauliflower to a clean kitchen towel and wring out as much moisture as possible.
  5. In a mixing bowl, combine the squeezed cauliflower, eggs, 1 cup grated Parmesan cheese, salt, and pepper. Mix well.
  6. Press the cauliflower mixture into the bottom of a greased 9-inch deep-dish pie pan, forming a crust. Bake for 15-20 minutes or until the crust is golden and set. Remove from the oven and set aside.
  7. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  8. Add the minced garlic, dried oregano, dried basil, salt, and pepper to the beef. Stir well and cook for an additional 2 minutes.
  9. Layer the cooked beef over the cauliflower crust in the pie pan.
  10. Spread the ricotta cheese evenly over the beef layer.
  11. Pour the low-carb marinara sauce over the ricotta layer and spread it out.
  12. Sprinkle the shredded mozzarella and grated Parmesan cheese over the top.
  13. Bake the deep-dish meat lasagna in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  14. Remove the lasagna from the oven and let it cool for a few minutes before slicing and serving.
