Ingredients:
For the “Noodles”:
- 1 large cauliflower head
- 2 large eggs
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
For the Filling:
- 1 lb ground beef
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup low-carb marinara sauce
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut the cauliflower into florets and place them in a food processor. Pulse until it reaches a rice-like consistency.
- In a microwave-safe bowl, steam the riced cauliflower for about 5 minutes, then let it cool slightly.
- Transfer the cauliflower to a clean kitchen towel and wring out as much moisture as possible.
- In a mixing bowl, combine the squeezed cauliflower, eggs, 1 cup grated Parmesan cheese, salt, and pepper. Mix well.
- Press the cauliflower mixture into the bottom of a greased 9-inch deep-dish pie pan, forming a crust. Bake for 15-20 minutes or until the crust is golden and set. Remove from the oven and set aside.
- In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add the minced garlic, dried oregano, dried basil, salt, and pepper to the beef. Stir well and cook for an additional 2 minutes.
- Layer the cooked beef over the cauliflower crust in the pie pan.
- Spread the ricotta cheese evenly over the beef layer.
- Pour the low-carb marinara sauce over the ricotta layer and spread it out.
- Sprinkle the shredded mozzarella and grated Parmesan cheese over the top.
- Bake the deep-dish meat lasagna in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove the lasagna from the oven and let it cool for a few minutes before slicing and serving.
