Low Carb Cream Cheese Peanut Butter Fudge

Ingredients:

  • 8 oz (about 227g) cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1/2 cup smooth peanut butter (sugar-free)
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered erythritol or your preferred low-carb sweetener
  • Pinch of salt

Instructions:

  1. Prepare a Pan:
    • Line a square baking pan (8×8 inches) with parchment paper, leaving an overhang on the sides for easy removal.
  2. Soften Cream Cheese and Butter:
    • Allow the cream cheese and butter to soften at room temperature. This will make them easier to blend.
  3. Combine Ingredients:
    • In a mixing bowl, combine the softened cream cheese, butter, and smooth peanut butter.
  4. Add Vanilla and Sweetener:
    • Add the vanilla extract and powdered erythritol to the mixture. Mix well until smooth and thoroughly combined.
  5. Adjust Sweetness:
    • Taste the mixture and adjust the sweetness to your liking by adding more sweetener if necessary.
  6. Add a Pinch of Salt:
    • Add a pinch of salt to enhance the flavors. Mix it into the fudge mixture.
  7. Transfer to Pan:
    • Transfer the fudge mixture to the prepared baking pan. Use a spatula to spread it evenly.
  8. Chill in the Refrigerator:
    • Place the pan in the refrigerator and let the fudge set for at least 2-3 hours or until it becomes firm.
  9. Cut into Squares:
    • Once the fudge is set, use the parchment paper overhangs to lift it out of the pan. Place it on a cutting board and cut it into squares or desired shapes.
