Ingredients:
- 6 oz (170 g) semi-sweet or dark chocolate, chopped
- 3 tbsp unsalted butter
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
Instructions:
- Melt Chocolate:
- In a heatproof bowl over simmering water (double boiler), melt the chocolate and butter together until smooth. Remove from heat and let it cool slightly.
- Whip Egg Yolks:
- In a small bowl, whisk egg yolks with half the sugar (2 tbsp) until pale and creamy.
- Combine Chocolate & Yolks:
- Slowly fold the melted chocolate into the yolk mixture. Stir in vanilla extract.
- Whip Egg Whites:
- In a clean bowl, beat egg whites until soft peaks form. Gradually add the remaining sugar and continue beating until stiff peaks form.
- Fold in Egg Whites:
- Gently fold the egg whites into the chocolate mixture in 2–3 additions, being careful not to deflate the mousse.
- Whip Cream:
- In another bowl, whip the heavy cream to soft peaks.
- Combine & Chill:
- Fold whipped cream into the chocolate mixture until smooth and uniform.
- Divide into serving glasses or bowls. Refrigerate for at least 2–3 hours until set.
