Pepperoni Pizza Quesadillas (Crispy, Cheesy & Kid-Approved)

Ingredients

Main Ingredients

  • 4 large flour tortillas
  • 1 cup shredded mozzarella (or pizza blend)
  • ½ cup sliced turkey pepperoni
  • ¼ cup pizza sauce (or marinara)

Optional Add-Ins

  • ¼ cup diced bell pepper (for crunch)

Seasoning & Cooking

  • 1 tsp Italian seasoning
  • Pinch of red-pepper flakes (optional, for heat)
  • 1 tbsp olive oil or butter (for crisping)

Instructions

  1. Prep the filling
    In a bowl, mix mozzarella, turkey pepperoni, bell pepper (if using), Italian seasoning, and red-pepper flakes.
  2. Assemble
    Lay one tortilla flat. Spread a thin layer of pizza sauce over it.
    Sprinkle the cheese-pepperoni mixture evenly on top, then cover with a second tortilla.
  3. Cook
    Heat a skillet over medium heat and add a little olive oil or butter.
    Place the quesadilla in the pan and cook for 2–3 minutes per side, pressing gently, until golden brown and melty inside.
  4. Slice & serve
    Remove from the pan, slice into wedges, and serve hot.

Additional Notes

  • Extra Crispy Tip: Use butter instead of oil and press gently with a spatula.
  • Protein Boost: Add grilled chicken or extra turkey pepperoni.
  • Kid-Friendly: Skip the red-pepper flakes and serve with extra sauce for dipping.
