Blueberry Fluffy Cottage Cheese Cloud Bread

Quick Description

This Blueberry Fluffy Cottage Cheese Cloud Bread is soft, pillowy, and melts in your mouth. Made with just three simple ingredients, it’s naturally high in protein, low in carbs, and completely flourless. The whipped egg whites create that signature cloud-like texture, while blueberries add gentle sweetness and juicy bursts in every bite. Perfect for breakfast, snacks, or a light dessert.

Servings & Timing

  • Servings: 6–8 cloud breads
  • Prep Time: 10 minutes
  • Bake Time: 25–30 minutes
  • Total Time: ~40 minutes

Ingredients List

  • 1 cup cottage cheese
Full-fat gives the fluffiest texture, but low-fat works too
  • 3 large eggs, separated
  • ½ cup blueberries
Fresh or frozen (do not thaw if frozen)

Optional (for extra flavor & structure):

  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt

Step-by-Step Instructions

Step 1: Preheat & Prepare

Preheat oven to 300°F (150°C).
Line a baking sheet with parchment paper.

Step 2: Blend the Cottage Cheese

Add cottage cheese to a blender or food processor.
Blend until completely smooth and creamy.
This step is crucial—grainy cottage cheese = dense cloud bread.

Step 3: Whip the Egg Whites

In a clean, dry bowl, beat the egg whites (with a pinch of salt if using) until stiff peaks form.
They should stand straight up when you lift the whisk.

Step 4: Mix Yolks & Cottage Cheese

In a separate bowl, whisk the egg yolks with the blended cottage cheese.
Add vanilla extract and baking powder if using.

Step 5: Fold Carefully

Gently fold the whipped egg whites into the cottage cheese mixture in 2–3 batches.
Use slow, light motions to keep the batter airy.

Step 6: Add Blueberries

Gently fold in the blueberries last.
Be careful not to crush them or overmix.

Step 7: Shape

Spoon the mixture into small mounds on the prepared baking sheet.
Leave space between each—these will puff slightly.

Step 8: Bake

Bake for 25–30 minutes, until set, lightly golden, and dry on top.
Turn off the oven and let them sit inside with the door cracked open for 5–10 minutes to prevent collapsing.

Step 9: Cool & Enjoy

Remove from oven and cool slightly.
Enjoy warm, room temperature, or chilled.

Additional Notes

  • Do not rush the egg whites—this is the key to fluffiness.
  • Blending cottage cheese smooth makes all the difference.
  • For extra sweetness, drizzle with honey or sugar-free syrup after baking.
