Ingredients List

For the Cake

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 1 ½ cups chopped walnuts
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 2 large eggs
  • ½ cup butter, melted
  • 1 cup water
  • 1 cup mini marshmallows (optional, for topping)

For the Frosting

  • 1 cup heavy cream
  • 1 ½ cups powdered sugar
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract
  • ¼ cup butter, melted

Instructions

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

Step 2: Make the Cake Batter

In a large bowl, combine the flour, baking powder, cocoa powder, and granulated sugar.
In a separate bowl, whisk the eggs, melted butter, vanilla extract, and water.
Add the wet ingredients to the dry ingredients and stir until combined into a smooth batter.

Step 3: Bake the Cake

Pour the batter into the prepared pan and spread it evenly.
Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean (the cake will be slightly fudgy).

Step 4: Add the Marshmallows (Optional)

As soon as the cake comes out of the oven, sprinkle the mini marshmallows evenly over the top.
Return the cake to the oven and bake for an additional 5 minutes or until the marshmallows are puffed and golden.

Step 5: Prepare the Frosting

While the cake is cooling, make the frosting:
In a saucepan, combine the heavy cream, powdered sugar, cocoa powder, and melted butter.
Bring to a simmer over medium heat, stirring constantly, until smooth and slightly thickened.
Remove from heat and stir in the vanilla extract.

Step 6: Frost the Cake

Pour the frosting over the cooled cake and spread it evenly.
Top with the chopped walnuts, pressing them gently into the frosting.

Step 7: Cool and Serve

Allow the cake to cool for 15–20 minutes before slicing.
Serve and enjoy the gooey, rich goodness of Mississippi Mud Cake!

  • Nut-Free Option: Skip the walnuts or use a different nut like pecans, or leave them out entirely for a nut-free version.
