Teriyaki Chicken Lettuce Wraps

Ingredients
For the Chicken Filling:
2 tbsp olive oil or sesame oil
1 lb (450g) chicken breast, finely chopped or minced
3 cloves garlic, minced
1 tsp fresh ginger, grated
½ cup bell peppers, finely chopped
½ cup carrots, finely chopped
2 green onions, sliced
For Keto Teriyaki Sauce:
¼ cup soy sauce or coconut aminos
2 tbsp keto honey or monk-fruit sweetener
1 tbsp rice vinegar or apple cider vinegar
1 tsp sesame oil
½ tsp xanthan gum (optional, for thickening)
For Serving:
Butter lettuce or iceberg lettuce leaves
Sesame seeds (optional)
Instructions
- Heat oil in a pan over medium heat.
- Add garlic and ginger, sauté until fragrant (30 seconds).
- Add chicken and cook until fully done and lightly golden.
- Stir in bell peppers and carrots; cook for 2–3 minutes until tender but crisp.
- In a bowl, whisk all teriyaki sauce ingredients.
- Pour sauce over chicken mixture and cook for 1–2 minutes until glossy and thick.
- Spoon hot chicken into crisp lettuce leaves.
- Garnish with green onions and sesame seeds.
