A fluffy, protein-rich savory loaf filled with diced ham, black olives, herbs, and veggies. It slices beautifully and tastes amazing warm or cold.

Ingredients
- 6 large eggs
- 1 cup milk (or half-and-half for richer flavor)
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- ½ tsp black pepper
- 1 cup diced ham
- ½ cup sliced black olives
- ½ cup finely chopped broccoli (lightly steamed)
- ½ cup shredded cheese (cheddar, mozzarella, or Swiss)
- 2 tbsp chopped parsley or green onions
- ¼ cup olive oil or melted butter
Optional add-ins:
- Red bell pepper
- Spinach
- Cooked bacon
- Sun-dried tomatoes
Instructions
Preheat Oven
Preheat to 350°F (175°C).
Grease and line a loaf pan with parchment paper.
Mix Wet Ingredients
In a large bowl, whisk eggs and milk.
Add olive oil (or butter) and mix well.
Combine Dry Ingredients
In another bowl, mix flour, baking powder, salt, and pepper.
Combine Everything
Gradually fold dry ingredients into wet mixture.
Stir in ham, olives, broccoli, cheese, and herbs.
Mix until just combined (don’t overmix).
Bake
Pour batter into loaf pan.
Bake for 45–50 minutes or until golden and a toothpick comes out clean.
Cool & Slice
Let cool 10–15 minutes before slicing.
Serve warm or at room temperature.

Replace:
- ½ cup flour with protein powder
- Add ½ cup cottage cheese (blend smooth first)
This increases protein significantly and keeps it moist.
