Cheesy Baked Potato Loaf

A comforting, cheesy potato bake made with tender diced potatoes, eggs, and melted cheese. Perfect as a side dish or even breakfast.

Ingredients
- 4 medium potatoes, peeled and diced small
- 1½ cups shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 4 large eggs
- ½ cup milk or cream
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp melted butter or olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp dried oregano (optional)
Optional add-ins:
- Cooked bacon bits
- Diced ham
- Chopped parsley
Instructions
Preheat
Preheat oven to 375°F (190°C).
Grease a loaf pan or line with parchment paper.
Cook Potatoes
Boil diced potatoes in salted water for 8–10 minutes until just tender (not mushy).
Drain well.
Mix
In a large bowl, whisk eggs, milk, melted butter, salt, pepper, paprika, and oregano.
Fold in:
- Cooked potatoes
- Onion
- Garlic
- 1 cup mozzarella
- Cheddar
Mix gently.
Assemble
Pour mixture into prepared loaf pan.
Top with remaining ½ cup mozzarella.
Bake
Bake 45–55 minutes until golden brown and fully set in the center.
Top should be deep golden and slightly crispy.
Rest
Let cool 10–15 minutes before slicing.
This helps it hold shape.
