Ingredients

- 1 cup brown sugar (light or dark)
- 2 large eggs
- 1 cup mashed ripe bananas (about 2–3 medium bananas)
- 1 tsp vanilla extract
- ½ cup buttermilk (or regular milk)
- ½ cup chopped walnuts or pecans (optional)
For the Drizzle Icing:
- 1 cup powdered sugar
- 2 tbsp milk (or as needed to reach drizzling consistency)
- ½ tsp vanilla extract
Optional Toppings:
- Crushed red candy sprinkles
- Chopped nuts or banana slices
Instructions
- Preheat oven – Set oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix dry ingredients – In a bowl, whisk together flour, baking soda, salt, and cinnamon.
- Cream butter and sugar – In a large bowl, beat butter and brown sugar until light and fluffy.
- Add eggs & bananas – Beat in eggs one at a time, then add mashed bananas and vanilla extract.
- Combine wet and dry ingredients – Gradually stir in dry ingredients, alternating with buttermilk, until just combined.
- Scoop & bake – Spoon batter into muffin tins, filling each about ¾ full. Bake for 18–20 minutes, or until a toothpick comes out clean.
- Cool & prepare icing – Let muffins cool in the tin for 5 minutes, then transfer to a wire rack. In a small bowl, whisk together powdered sugar, milk, and vanilla to make the icing drizzle.
- Drizzle & serve – Drizzle icing over cooled muffins and top with crushed candy sprinkles or chopped nuts for added crunch and flavor.
