BUTTERSCOTCH MOUSSE:

Ingredients:

  • 1 cup butterscotch chips
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 4 large egg yolks
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Whipped cream and butterscotch chips (for garnish)

Instructions:

  1. In a heatproof bowl, melt the butterscotch chips and butter together over a double boiler or in the microwave. Stir until smooth and set aside to cool slightly.
  2. In a separate bowl, whisk the egg yolks, sugar, vanilla extract, and salt until well combined.
  3. In a saucepan, heat the heavy cream until it begins to simmer. Slowly pour the hot cream into the egg mixture, whisking constantly.
  4. Return the mixture to the saucepan and cook over low heat, stirring continuously, until it thickens and coats the back of a spoon. Do not let it boil.
  5. Remove the saucepan from heat and stir in the melted butterscotch mixture until smooth and well combined.
  6. Transfer the mixture to individual serving glasses or bowls. Cover and refrigerate for at least 2 hours, or until set.
  7. Before serving, garnish with whipped cream and a sprinkle of butterscotch chips.
