Instructions:
- In a heatproof bowl, melt the butterscotch chips and butter together over a double boiler or in the microwave. Stir until smooth and set aside to cool slightly.
- In a separate bowl, whisk the egg yolks, sugar, vanilla extract, and salt until well combined.
- In a saucepan, heat the heavy cream until it begins to simmer. Slowly pour the hot cream into the egg mixture, whisking constantly.
- Return the mixture to the saucepan and cook over low heat, stirring continuously, until it thickens and coats the back of a spoon. Do not let it boil.
- Remove the saucepan from heat and stir in the melted butterscotch mixture until smooth and well combined.
- Transfer the mixture to individual serving glasses or bowls. Cover and refrigerate for at least 2 hours, or until set.
- Before serving, garnish with whipped cream and a sprinkle of butterscotch chips.
