Salt and black pepper, to taste
2½ cups cheddar cheese, shredded
6 slices bacon
1 tablespoon Italian seasoning
2 green onions, diced

Step-by-Step Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Step 2: Prepare the Potatoes
Slice the potatoes into approximately ½-inch thick slices. Arrange them on the baking sheet in a single layer.
Step 3: Season the Potatoes
Brush the tops with vegetable oil. Flip them and brush the other side as well. Season with salt and black pepper.
Step 4: Bake the First Time
Bake the potato slices in the oven for about 25 minutes until they begin to soften.
Step 5: Cook the Bacon
While the potatoes bake, cook the bacon in a skillet over low heat. Flip occasionally until crispy. Remove and crumble the bacon, keeping the bacon drippings in the pan.
Step 6: Crisp the Potatoes
Remove the potato slices from the oven and lightly brush them with the bacon drippings. Flip and repeat. Return them to the oven and bake for another 10 minutes.
Step 7: Add Cheese and Bacon
Reduce the oven temperature to 350°F (175°C). Sprinkle shredded cheddar cheese and crumbled bacon over the potato slices.
Step 8: Melt the Cheese
Place the tray back in the oven and bake for about 5 minutes, or until the cheese melts and becomes bubbly
Step 9: Finish and Serve
Remove from the oven and sprinkle Italian seasoning and diced green onions on top. Serve warm with sour cream for dipping.
Serving Suggestions
Serve these potato slices as a game-day appetizer, party snack, or alongside grilled chicken or burgers. They also pair well with a simple salad for a light meal.
