Knife and cutting board

How to Make Cheesy Chicken & Mashed Potato Bake

1. Prepare the Mashed Potatoes

Bring a large pot of salted water to a boil.
Add the cubed potatoes and cook for 15–18 minutes, until fork-tender.

Drain well, then mash with butter and milk (or Greek yogurt).
Season generously with salt and black pepper.
Mash until smooth and creamy. Set aside.

2. Season and Cook the Chicken

Pat chicken breasts dry and season both sides with:

garlic powder
onion powder
paprika
black pepper
salt

Heat olive oil in a skillet over medium-high heat.
Cook chicken 4–5 minutes per side, until golden and fully cooked (internal temp 165°F / 74°C).

Remove from heat and slice into strips or bite-sized pieces.

3. Assemble the Bake

Preheat oven to 375°F (190°C).

Spread mashed potatoes evenly across the bottom of a greased baking dish.

Layer sliced chicken evenly over the potatoes.

Pour the chicken gravy over the chicken layer, spreading gently to cover.

Sprinkle shredded cheese evenly over the top.

4. Bake

Bake uncovered for 30–35 minutes, or until:

cheese is fully melted
edges are bubbling
top is lightly golden

For extra browning, broil for 2–3 minutes at the end.

5. Rest & Serve

Let the bake rest for 5–10 minutes before serving.
This helps it set and makes slicing easier.
