Cheesy Chicken Zucchini Meatloaf (Low-Carb & Diabetic-Friendly)

Ingredients (Makes 4 mini loaves):
1 lb ground chicken
1/2 cup grated zucchini (moisture squeezed out)
1/2 cup shredded mozzarella cheese
1/4 cup almond flour
1 egg
2 garlic cloves, minced
1 tsp Italian seasoning
Salt & pepper to taste
Optional: extra mozzarella + fresh parsley for topping
Instructions:
Preheat oven to 375°F (190°C).
In a bowl, mix ground chicken, zucchini, cheese, almond flour, egg, garlic, and seasonings.
Shape into 4 mini loaves and place on a baking tray.
Bake for 25–30 minutes.
Top with extra cheese and broil 2–3 min until melted and golden.
Garnish with fresh parsley and serve
