Instructions:
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the shredded chicken, salsa, and shredded cheese. Season with salt and pepper to taste, and mix well.
- Place a small portion of the chicken mixture onto the center of each tortilla, then roll it tightly into a cigar shape, securing it with toothpicks if necessary.
- Heat the vegetable oil in a skillet over medium-high heat. Carefully place the flautas seam-side down in the skillet, and cook until golden brown and crispy on all sides. Remove from the skillet and let them drain on a paper towel.
- Transfer the flautas to a baking sheet lined with parchment paper. Bake in the preheated oven for about 10-15 minutes, or until they are crispy and heated through.
- Once cooked, remove the toothpicks, and serve the flautas hot with your choice of optional toppings.
