Cheesy Loaded Meatloaf Casserole

Ingredients
- 3 cups leftover garlic mashed potatoes
- 1 pound lean ground beef
- 1/2 cup finely chopped white onion
- 3 cloves garlic minced
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 cup Italian breadcrumbs
- 1 large egg
- 1 1/2 cups sharp cheddar cheese grated
- 1/3 cup cooked and crumbled bacon or bacon bits
- Kosher salt and freshly ground black pepper to taste
Instructions
- Preheat Oven: Set the oven to 400°F (200°C).
- Prepare Beef Mixture: In a large bowl, combine the ground beef, onion, garlic, brown sugar, and Worcestershire sauce. Mix well using your hands or two forks.
- Season and Add Ingredients: Season generously with salt and pepper. Mix in the breadcrumbs and egg until fully combined.
- Layer in Baking Dish: Press the ground beef mixture evenly into an 8-inch square baking dish.
- Add Toppings: Spread the mashed potatoes evenly over the beef layer. Sprinkle grated cheddar cheese on top, followed by the crumbled bacon.
- Bake: Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbling.
- Serve: Allow to cool slightly before serving. Enjoy!
