Creamy Sauce:

  • 1 container green onion cream cheese (softened)
  • ¼ cup olive oil
  • ½ cup chicken broth

Instructions:

Step 1: Preheat Oven & Prepare Pan

  • Preheat oven to 375°F (190°C).
  • Lightly grease a 9×13-inch baking dish.

Step 2: Layer the Dish

  • Lay chicken breasts flat in a single layer at the bottom of the dish.
  • Top with a generous handful of fresh baby spinach and sliced mushrooms.

Step 3: Make the Cream Sauce

  • Soften the green onion cream cheese.
  • Whisk together with olive oil and chicken broth until smooth.
  • Pour this mixture evenly over the chicken and veggies.

Step 4: Cover and Bake

  • Lay foil over the top of the dish (do not seal tightly).
  • Bake for 20 minutes.

Step 5: Uncover, Bake Again

  • Remove foil and continue baking uncovered for another 20–25 minutes.
