Chicken Zucchini Bake (Low Carb + High Protein!)

A hearty one-pan meal packed with flavor and protein — perfect for meal prep!

Ingredients:

3 chicken breasts, cubed

2 zucchinis, sliced

1 pint cherry tomatoes, halved

1 red bell pepper, diced

½ red onion, sliced

3 garlic cloves, minced

¼ cup olive oil

1 tsp oregano

1 tsp basil

½ tsp thyme

Salt & pepper

½ cup feta cheese

Directions:

Mix everything (except feta) in a baking dish.

Bake at 400°F (200°C) for 25–30 min.

Top with feta, bake 5 more minutes.
