Classic Chocolate Mousse Recipe

Ingredients:

  • 6 oz (170 g) semi-sweet or dark chocolate, chopped
  • 3 tbsp unsalted butter
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

Instructions:

  1. Melt Chocolate:
    • In a heatproof bowl over simmering water (double boiler), melt the chocolate and butter together until smooth. Remove from heat and let it cool slightly.
  2. Whip Egg Yolks:
    • In a small bowl, whisk egg yolks with half the sugar (2 tbsp) until pale and creamy.
  3. Combine Chocolate & Yolks:
    • Slowly fold the melted chocolate into the yolk mixture. Stir in vanilla extract.
  4. Whip Egg Whites:
    • In a clean bowl, beat egg whites until soft peaks form. Gradually add the remaining sugar and continue beating until stiff peaks form.
  5. Fold in Egg Whites:
    • Gently fold the egg whites into the chocolate mixture in 2–3 additions, being careful not to deflate the mousse.
  6. Whip Cream:
    • In another bowl, whip the heavy cream to soft peaks.
  7. Combine & Chill:
    • Fold whipped cream into the chocolate mixture until smooth and uniform.
    • Divide into serving glasses or bowls. Refrigerate for at least 2–3 hours until set.

Optional Garnishes:

  • Whipped cream swirl
  • Chocolate shavings or cocoa powder
  • Fresh berries or mint leaves
