Copycat Alice Springs Chicken

Chicken breasts4, boneless and skinless, flattened to a thickness of 1/2 inch
Bacon6 slices
Dried onion flakes2 teaspoons
Honey1/3 cup
Yellow mustard1/4 cup
Mayonnaise2 tablespoons
Shredded cheese of choice2 cups, we like a blend of Colby and Jack
SaltTo taste
Optional: Fresh mushrooms1 cup, sliced

Instructions:

  1. Prepare the Chicken:
    • Flatten chicken breasts to a thickness of 1/2 inch.
    • Season both sides with salt and dried onion flakes.
  2. Wrap with Bacon:
    • Wrap each chicken breast with 1-2 slices of bacon.
    • Secure ends with toothpicks if needed.
  3. Cook the Chicken:
    • Grill or pan-fry bacon-wrapped chicken breasts over medium heat.
    • Cook for 6-8 minutes per side until bacon is crispy and chicken is fully cooked.
  4. Prepare the Honey Mustard Sauce:
    • In a small bowl, whisk together honey, yellow mustard, and mayonnaise until smooth.
  5. Assemble the Dish:
    • Preheat oven to 375°F (190°C).
    • Place cooked chicken breasts in a baking dish.
    • Optionally, sauté sliced mushrooms until golden brown and tender.
    • Layer mushrooms over chicken breasts.
    • Pour honey mustard sauce evenly over chicken.
  6. Sprinkle with Cheese:

    • Bake in preheated oven for 10-12 minutes, or until cheese is melted and bubbly.
