Copycat Alice Springs Chicken

Ingredient | Quantity |

Chicken breasts | 4, boneless and skinless, flattened to a thickness of 1/2 inch |
Bacon | 6 slices |
Dried onion flakes | 2 teaspoons |
Honey | 1/3 cup |
Yellow mustard | 1/4 cup |
Mayonnaise | 2 tablespoons |
Shredded cheese of choice | 2 cups, we like a blend of Colby and Jack |
Salt | To taste |
Optional: Fresh mushrooms | 1 cup, sliced |
Instructions:
- Prepare the Chicken:
- Flatten chicken breasts to a thickness of 1/2 inch.
- Season both sides with salt and dried onion flakes.
- Wrap with Bacon:
- Wrap each chicken breast with 1-2 slices of bacon.
- Secure ends with toothpicks if needed.
- Cook the Chicken:
- Grill or pan-fry bacon-wrapped chicken breasts over medium heat.
- Cook for 6-8 minutes per side until bacon is crispy and chicken is fully cooked.
- Prepare the Honey Mustard Sauce:
- In a small bowl, whisk together honey, yellow mustard, and mayonnaise until smooth.
- Assemble the Dish:
- Preheat oven to 375°F (190°C).
- Place cooked chicken breasts in a baking dish.
- Optionally, sauté sliced mushrooms until golden brown and tender.
- Layer mushrooms over chicken breasts.
- Pour honey mustard sauce evenly over chicken.
- Sprinkle with Cheese:
- Bake to Perfection:
- Bake in preheated oven for 10-12 minutes, or until cheese is melted and bubbly.
- Serve and Enjoy:
- Remove dish from oven and let it cool for a few minutes.
