Cream Cheese Corn Casserole

Ingredients
- 2 cans 15 oz / 425 g each whole kernel corn, drained
- 1 can 15 oz / 425 g creamed corn
- 8 oz 225 g cream cheese, softened and cubed
- ½ cup 115 g unsalted butter, melted
- 1 cup 100 g shredded cheddar cheese
- ¼ cup 30 g finely chopped onion (optional)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp paprika optional, for mild warmth
Instructions
- Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch (20×20 cm) baking dish.
- In a large bowl, combine the drained whole corn and creamed corn.
- Add the cream cheese cubes and melted butter, stirring until mostly smooth (small cream cheese bits are fine).
- Mix in cheddar cheese, onion (if using), salt, pepper, and paprika.
- Spread the mixture evenly into the prepared baking dish.
- Bake uncovered for 35–40 minutes, until hot, bubbly, and lightly golden on top.
- Let rest 5 minutes before serving.
