Cream Cheese Corn Casserole

Ingredients

  • 2 cans 15 oz / 425 g each whole kernel corn, drained
  • 1 can 15 oz / 425 g creamed corn
  • 8 oz 225 g cream cheese, softened and cubed
  • ½ cup 115 g unsalted butter, melted
  • 1 cup 100 g shredded cheddar cheese
  • ¼ cup 30 g finely chopped onion (optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika optional, for mild warmth

Instructions

  • Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch (20×20 cm) baking dish.
  • In a large bowl, combine the drained whole corn and creamed corn.
  • Add the cream cheese cubes and melted butter, stirring until mostly smooth (small cream cheese bits are fine).
  • Mix in cheddar cheese, onion (if using), salt, pepper, and paprika.
  • Spread the mixture evenly into the prepared baking dish.
  • Bake uncovered for 35–40 minutes, until hot, bubbly, and lightly golden on top.
  • Let rest 5 minutes before serving.
