Creamy Beef Taco Soup

Ingredients:

  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (4 ounces) diced green chilies
  • 1 packet (1 ounce) taco seasoning
  • 4 cups beef broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro

Instructions:

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the diced onion and minced garlic to the pot with the ground beef and cook for another 3-4 minutes until the onion is softened.
  3. Stir in the diced tomatoes, black beans, corn kernels, diced green chilies, and taco seasoning. Mix well.
  4. Pour in the beef broth and bring the soup to a boil. Reduce the heat to low and simmer for 20 minutes, allowing the flavors to meld together.
  5. Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes.
  6. Remove from heat and serve hot. Garnish with your desired toppings such as shredded cheese, sour cream, diced avocado, and chopped cilantro.
