Instructions
Step 1: Make the Custard Cream
- Heat Milk: In a medium saucepan, heat 2 ½ cups milk over medium heat until it begins to steam (do not boil).
- Mix Egg Yolks and Dry Ingredients: In a separate bowl, whisk together the egg yolks, sugar, cornstarch, flour, and the remaining ½ cup milk until smooth and well combined.
- Temper the Eggs: Slowly pour the hot milk into the egg mixture while whisking constantly to avoid curdling the eggs.
- Thicken the Custard: Return the mixture to the saucepan and cook over medium heat, whisking continuously, for 5–7 minutes until the custard thickens and becomes creamy.
- Add Vanilla & Butter: Remove the saucepan from heat. Stir in vanilla extract and butter until the custard is smooth and glossy.
- Cool the Custard: Pour the custard cream into a glass dish and smooth the top. Let it cool at room temperature, then refrigerate for 30–40 minutes until firm.
Step 2: Prepare the Chocolate Ganache
- Heat Cream: In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Do not let it boil.
- Melt Chocolate: Pour the hot cream over the chopped dark chocolate in a heatproof bowl. Let it sit for 2–3 minutes to allow the chocolate to soften.
- Combine Ingredients: Stir gently until the chocolate is completely melted and the ganache is smooth and shiny. Add 1 tablespoon of unsalted butter and stir until fully incorporated.
Step 3: Assemble the Dessert
- Pour Ganache: Pour the smooth chocolate ganache over the chilled custard base, spreading it evenly with a spatula to cover the custard layer completely.
- Chill and Set: Return the dessert to the refrigerator for at least 30 minutes to allow the ganache to set and firm up.
Step 4: Serve
- Once the dessert is set, serve chilled. Optionally, garnish with whipped cream, chocolate shavings, or fresh berries for added flair.
