Crispy Cheesy Chicken Fritters

Ingredients

  • 2 cups cooked chicken, finely chopped or shredded
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ¼ cup all-purpose flour (or almond flour for low-carb)
  • 2 tbsp mayonnaise or Greek yogurt
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 2–3 tbsp olive oil (for frying)

Instructions

1️⃣ Mix the Batter

  • In a large bowl combine:
    • Chicken
    • Mozzarella
    • Parmesan
    • Eggs
    • Flour
    • Mayo or yogurt
    • Garlic
    • Parsley
    • Salt, pepper, paprika
  • Mix until well combined. The mixture should be thick and scoopable.

2️⃣ Shape

  • Scoop about 2 tablespoons per fritter.
  • Lightly flatten into small patties.

 Cook

  • Heat olive oil in a skillet over medium heat.
  • Cook fritters 3–4 minutes per side until golden brown and crispy.
  • Cook in batches to avoid overcrowding.

4️⃣ Drain & Serve

  • Transfer to paper towel-lined plate.
  • Serve warm with sour cream, Greek yogurt dip, or garlic sauce.
  • Add lemon wedges for brightness.

Optional Baking Method

  • Preheat oven to 400°F (200°C)
  • Place fritters on lined baking sheet
  • Bake 15–18 minutes, flipping halfway
