Ingredients (Makes 12 Muffins)

2 cups liquid egg whites (or ~10 large egg whites)

½ cup cottage cheese (for extra protein & fluffiness)

½ cup shredded cheese (cheddar, mozzarella, or your choice)

½ cup diced bell peppers

½ cup fresh spinach (chopped)

¼ cup diced onions

½ tsp garlic powder

½ tsp black pepper

¼ tsp salt

½ tsp Italian seasoning or paprika (for extra flavor)
