Frozen Yogurt Blueberry Bark

A crunchy, creamy frozen treat made with yogurt, blueberries, and a touch of sweetness. Perfect for a refreshing high-protein snack or dessert that you can grab straight from the freezer.

Ingredients

  • 1 ½ cups Greek yogurt (plain or vanilla, high-protein if desired)
  • 2–3 tbsp honey, maple syrup, or sugar-free sweetener
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries (can also use raspberries or strawberries)

Optional Toppings

  • Chopped nuts (almonds, pistachios, or walnuts)
  • Mini dark chocolate chips
  • Shredded coconut
  • Chia seeds or flaxseeds

Instructions

  1. Prepare Yogurt Base: In a bowl, mix Greek yogurt, honey (or sweetener), and vanilla until smooth.
  2. Spread on Tray: Line a baking sheet with parchment paper and spread yogurt mixture evenly (about ½-inch thick).
  3. Add Blueberries: Sprinkle blueberries (and any extra toppings) evenly over the yogurt. Press lightly so they stick.
  4. Freeze: Place tray in the freezer for 2–3 hours, until fully set.
  5. Break Into Pieces: Remove from freezer, peel off parchment, and break into bark pieces.
  6. Serve & Store: Keep in freezer in an airtight container for up to 2 weeks.
