Frozen Yogurt Blueberry Bark

A crunchy, creamy frozen treat made with yogurt, blueberries, and a touch of sweetness. Perfect for a refreshing high-protein snack or dessert that you can grab straight from the freezer.

Ingredients
- 1 ½ cups Greek yogurt (plain or vanilla, high-protein if desired)
- 2–3 tbsp honey, maple syrup, or sugar-free sweetener
- 1 tsp vanilla extract
- 1 cup fresh blueberries (can also use raspberries or strawberries)
Optional Toppings
- Chopped nuts (almonds, pistachios, or walnuts)
- Mini dark chocolate chips
- Shredded coconut
- Chia seeds or flaxseeds
Instructions
- Prepare Yogurt Base: In a bowl, mix Greek yogurt, honey (or sweetener), and vanilla until smooth.
- Spread on Tray: Line a baking sheet with parchment paper and spread yogurt mixture evenly (about ½-inch thick).
- Add Blueberries: Sprinkle blueberries (and any extra toppings) evenly over the yogurt. Press lightly so they stick.
- Freeze: Place tray in the freezer for 2–3 hours, until fully set.
- Break Into Pieces: Remove from freezer, peel off parchment, and break into bark pieces.
- Serve & Store: Keep in freezer in an airtight container for up to 2 weeks.
