High-Protein Chocolate Chip Cookies

Makes: 8–10 cookies
Protein: ~8–10g per cookie (depends on protein powder)
Ingredients
- 1 cup oat flour (or blend rolled oats into flour)
- ½ cup vanilla or chocolate protein powder
- ¼ tsp baking soda
- Pinch of salt
- ¼ cup nut butter (peanut or almond butter)
- ¼ cup maple syrup or honey
- 1 large egg
- 1 tsp vanilla extract
- ¼ cup dark chocolate chips (or sugar-free chips)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix oat flour, protein powder, baking soda, and salt.
- Add nut butter, maple syrup, egg, and vanilla. Stir until a thick cookie dough forms.
- Fold in chocolate chips.
- Scoop dough onto the baking sheet and gently flatten (they don’t spread much).
- Bake 8–10 minutes until edges are set but centers are soft.
- Cool for 5 minutes (they firm up as they cool).
Texture Tips
- Softer cookies: Slightly underbake
- Crispier cookies: Bake 1–2 minutes longer
- Too dry? Add 1–2 tbsp milk or yogurt

- Replace 1 whole egg with 2 egg whites
- Add 1–2 tbsp Greek yogurt
- Use whey or whey-blend protein powder for best texture
