Homemade Egg Bites with Ham and Cheese

Ingredients:

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced ham
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or oil, for greasing the muffin tin

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
  2. In a blender or food processor, combine the eggs, cottage cheese, shredded cheddar cheese, milk, salt, and black pepper. Blend until well combined and smooth.
  3. Stir in the diced ham into the egg mixture.
  4. Pour the egg mixture evenly into the greased muffin tin, filling each cup about 3/4 full.
  5. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and slightly golden on top.
  6. Remove from the oven and let them cool in the muffin tin for a few minutes. Then, carefully remove the egg bites from the tin using a spoon or silicone spatula.
  7. Serve the egg bites warm and enjoy!
