Keto Cheeseburger Soup Recipe


  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional toppings: diced pickles, diced onions, diced tomatoes, shredded lettuce


  1. In a large pot, cook the ground beef over medium heat until browned and crumbled. Drain any excess grease.
  2. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in the beef broth, heavy cream, shredded cheddar cheese, tomato paste, dried basil, and dried thyme. Season with salt and pepper to taste.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 10-15 minutes, or until the cheese is melted and the flavors have combined.
  5. Serve hot, garnished with any desired toppings.
