- 1/3 cup coconut flour
- 1/2 cup granulated erythritol or sweetener of choice
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts or pecans (optional)
- Butter or oil for greasing the pan
Instructions:
- Preheat Oven:
- Ready your oven for baking at 350°F (175°C). To prepare a loaf pan of normal size, coat it with oil or butter.
- Mix Wet Ingredients:
- Beat the eggs with the mashed bananas, melted butter, cream cheese, and vanilla extract in a large bowl. Blend until completely combined, using a whisk or hand mixer.
- Combine Dry Ingredients:
- Combine the flours of almonds and coconuts with the sugar substitute (erythritol), baking soda, salt, baking powder, and flour in another bowl.
- Combine Mixtures:

- Fold in Nuts:
- Once incorporated into the batter, fold in the chopped nuts, if using.
- Transfer to Pan:
- Evenly distribute the batter into the loaf pan that has been oiled.
- Bake:
- Fifty to sixty minutes into the preheated oven, or until a toothpick left with just wet crumbs or no residue emerges from the center when inserted.
- Cool:
- After the banana bread has cooled for approximately 10 minutes in the pan, turn it out onto a wire rack to finish cooling.
- Slice and Serve:
