Ingredients

  • ▢2 packets Shirataki Fettuccini
  • ▢2 tablespoons Olive Oil
  • ▢10 ounces Homemade Italian Sausage
  • ▢½ cup Chicken Stock
  • ▢½ teaspoon Xanthan Gum
  • ▢3 cloves Garlic finely chopped
  • ▢8 ounces Canned Diced Tomatoes
  • ▢½ cup Heavy Cream
  • ▢Salt to taste
  • ▢Pepper to taste
  • ▢2 ounces Parmesan Cheese shredded
  • ▢Fresh Basil to serve

Instructions

  • Prepare the fettuccini according to the packet directions, drain well and set aside.
  • Place a nonstick frying pan over high heat, add 1 tablespoon of olive oil and the sausage. Brown while breaking up into smaller pieces. Set aside.
  • Whisk the xanthan gum into the cold chicken stock, set aside.
  • Add the remaining tablespoon of olive oil to a saucepan over high heat, add the garlic and saute 1-2 minutes.
  • Add the thickened chicken stock, and canned tomatoes, mix well.
  • Bring to a simmer, then add the browned sausage and cream.
  • Season with salt and pepper.
  • Add in the drained fettuccini noodles and mix well.
  • Simmer for 2-3 minutes, then remove from the heat.
  • Serve topped with parmesan cheese and fresh basil.
