Keto Magic Cookies:

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup erythritol (or preferred keto-friendly sweetener)
  • 1/4 cup butter, melted
  • 1/4 cup sugar-free dark chocolate chips
  • 1/4 cup chopped walnuts
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour, coconut flour, shredded coconut, erythritol, baking powder, and salt.
  3. Add the melted butter, egg, and vanilla extract to the dry ingredients. Mix well until a dough forms.
  4. Fold in the sugar-free dark chocolate chips and chopped walnuts into the dough.
  5. Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheet. Flatten each portion slightly with the back of a spoon.
  6. Bake in the preheated oven for 12-15 minutes or until the edges turn golden brown.
  7. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
