Keto Peanut Butter Fudge recipe

Ingredients:

  • 1 cup natural peanut butter (unsweetened)
  • 1/2 cup coconut oil
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol (or other keto-friendly sweetener)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. In a microwave-safe bowl, combine the peanut butter and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and well combined.
  2. Add the cocoa powder, powdered erythritol, vanilla extract, and salt to the melted mixture. Stir until smooth and thoroughly mixed.
  3. Pour the fudge mixture into a lined 8×8-inch baking dish.
  4. Smooth the top with a spatula and refrigerate for at least 2 hours or until firm.
  5. Once firm, cut the fudge into small squares and serve. Store any leftovers in an airtight container in the refrigerator.
