INGREDIENTS:

  • 4 without bone and skin chicken breasts
  • 1 cup low-carb marinara sauce
  • One tsp. Italian seasonin
  • 1 ½ cups shredded mozzarella cheese
  • 16–20 slices of pepperoni
  • 1 tbsp. olive oil
  • One tsp. garlic powder
  • Salt & pepper
  • Fresh basil or parsley

INGREDIENTS NOTES:

CHICKEN:

  • We can slice the chicken into equal pieces to cook the chicken evenly. The chicken will cook through without becoming dry by doing this.

KETO MARINARA SAUCE:

  • We can use a keto-friendly, sugar-free marinara sauce to keep the carbohydrates low. Make sure to read the labels of store-bought marinara sauces because many of them have additional sugar.

SHREDDED MOZZARELLA CHEESE:

  • We can use the fresh, shredded mozzarella to make the tastiest, melting, gooey topping. You can also add provolone or Parmesan cheese for extra taste.

PEPPERONI:

  • We can choose uncured or nitrate-free varieties to keep pepperoni as clean as possible for the keto diet. You can also use chicken or turkey pepperoni for a lower-fat option.

SEASONING:

  • You can change the Italian seasoning or add additions like garlic powder for more taste or crushed red pepper flakes for spice to create a unique flavor profile.

INSTRUCTION:

  1. Turn the oven on to 400°F.
  2. We can use Italian seasoning, garlic powder, salt, and pepper to season chicken breasts.
  3. We can warm the the olive oil in a pan on moderate-high heat to sear the chicken.
  4. Add chicken and sear for 3–4 minutes per side until golden brown.
  5. Cover with marinara, and then cover with a layer of mozzarella cheese and pepperoni pieces.
  6. Bake for 15 to 20 minutes or until the cheese are melted and bubbling and the internal temperature of the chicken reaches 165°F.
  7. We can top the pizza with parsley or basil and we can serve the pizza warm.
