Keto Lemon Garlic Butter Shrimp with Zucchini Noodles

Ingredients:

  • 1 pound shrimp, peeled and deveined
  • 2 medium zucchini, spiralized into noodles
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • Chopped fresh parsley (for garnish)

Instructions:

  1. In a large skillet, melt 2 tablespoons of butter over medium heat.
  2. Add the minced garlic and cook for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, melt the remaining 2 tablespoons of butter.
  5. Add the zucchini noodles to the skillet and sauté for 2-3 minutes until they are just tender. Be careful not to overcook them, as they can become mushy.
  6. Return the shrimp to the skillet with the zucchini noodles.
  7. Add the lemon juice and lemon zest to the skillet and toss everything together to combine. Cook for an additional minute to heat through.
  8. Season with salt and pepper to taste.
  9. Remove from heat and garnish with chopped fresh parsley.
  10. Serve hot and enjoy!
