Mediterranean Ground Beef Skillet

Ingredients

  • 500 g ground beef (80–85% lean recommended)
  • 2 tbsp olive oil
  • 1 small red onion, thinly sliced
  • 1 small yellow onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 medium zucchini, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • 100 g feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the skillet
    Heat a large skillet over medium-high heat. Add olive oil and let it warm for 30 seconds.
  2. Cook the beef
    Add ground beef to the skillet. Break it up with a spoon and cook for 5–6 minutes until browned. Season lightly with salt and black pepper.
  3. Add onions and garlic
    Stir in red onion, yellow onion, and garlic. Cook for 3–4 minutes until softened and fragrant.
  4. Add vegetables & seasoning
    Add zucchini, cherry tomatoes, and dried oregano. Stir well and cook for another 5–7 minutes, until zucchini is tender but not mushy and tomatoes are slightly blistered.
  5. Finish with feta
    Reduce heat to low. Sprinkle feta evenly over the skillet and let it soften for 1–2 minutes without stirring too much.
  6. Garnish & serve
    Remove from heat. Garnish with fresh parsley and serve hot.

  • Serve as-is for a low-carb meal
  • Spoon over rice, quinoa, or couscous
  • Serve with warm pita or flatbread
  • Add a squeeze of lemon for extra brightness
