Mexican Pizza (Taco Bell Copycat Style)

  • 1 lb ground beef
  • 1 (1 oz) packet taco seasoning (plus water as package directs)

Pizza Layers

  • 12 (6-inch) tortillas (fajita size)
  • 1 (16 oz) can refried beans
  • 1 (10 oz) can red enchilada sauce
  • ½ cup diced tomatoes
  • 1½ cups Mexican shredded cheese
  • ¼ cup sliced olives
  • ¼ cup taco sauce

Step-by-Step Instructions

1. Cook the Taco Meat

In a large skillet, brown the ground beef over medium heat until fully cooked.

Drain excess grease if needed.

Add taco seasoning and the amount of water listed on the seasoning packet.
Simmer until thick and well-seasoned.

Set aside.


2. Preheat Oven

Preheat oven to 400°F (200°C).

Place 6 tortillas on a baking sheet.

3. Warm the Refried Beans

Microwave refried beans for 1 minute until soft and spreadable.

Spread about ¼ cup beans onto each tortilla.


4. Layer the Meat

Divide the taco meat evenly over the bean layer.

Place the remaining 6 tortillas on top, forming a stacked pizza shape.


5. Add Sauce + Toppings

Brush 1–2 tablespoons enchilada sauce over the top tortilla.

Sprinkle diced tomatoes evenly over each pizza.

Top with about ¼ cup shredded cheese per pizza.


6. Bake

Bake for 6–8 minutes, until cheese is melted and bubbly.


7. Finish & Serve

Remove from oven and top with sliced olives.

Drizzle with taco sauce.

Add green onions, cilantro, and sour cream if desired.

Serve immediately while hot and crispy.
