Ingredients:
- 1 cup natural peanut butter (unsweetened)
- 1/4 cup coconut flour
- 1/4 cup almond flour
- 2 tablespoons powdered erythritol (or low-carb sweetener of your choice)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup sugar-free chocolate chips (optional, for coating)
Instructions:
- In a mixing bowl, combine the peanut butter, coconut flour, almond flour, powdered erythritol, vanilla extract, and salt. Stir well until all the ingredients are thoroughly combined.
- Place the mixture in the refrigerator for about 15-30 minutes to firm up.
- Once the mixture is firm enough to handle, take small portions and roll them into bite-sized balls. Place the balls on a baking sheet lined with parchment paper.
- If desired, melt the sugar-free chocolate chips in a microwave or on a stovetop using a double boiler. Stir until smooth.
- Dip each peanut butter ball into the melted chocolate to coat it partially or fully, as per your preference. Place the coated balls back on the parchment-lined baking sheet.
- Once all the balls are coated, refrigerate them for another 15-30 minutes, or until the chocolate has set.
- Serve chilled and enjoy!
