Peanut Butter Balls (low carb) recipe

Ingredients:

  • 1 cup natural peanut butter (unsweetened)
  • 1/4 cup coconut flour
  • 1/4 cup almond flour
  • 2 tablespoons powdered erythritol (or low-carb sweetener of your choice)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup sugar-free chocolate chips (optional, for coating)

Instructions:

  1. In a mixing bowl, combine the peanut butter, coconut flour, almond flour, powdered erythritol, vanilla extract, and salt. Stir well until all the ingredients are thoroughly combined.
  2. Place the mixture in the refrigerator for about 15-30 minutes to firm up.
  3. Once the mixture is firm enough to handle, take small portions and roll them into bite-sized balls. Place the balls on a baking sheet lined with parchment paper.
  4. If desired, melt the sugar-free chocolate chips in a microwave or on a stovetop using a double boiler. Stir until smooth.
  5. Dip each peanut butter ball into the melted chocolate to coat it partially or fully, as per your preference. Place the coated balls back on the parchment-lined baking sheet.
  6. Once all the balls are coated, refrigerate them for another 15-30 minutes, or until the chocolate has set.
  7. Serve chilled and enjoy!
