Pepperoni Pizza Quesadillas (Crispy, Cheesy & Kid-Approved)

Ingredients
Main Ingredients
- 4 large flour tortillas
- 1 cup shredded mozzarella (or pizza blend)
- ½ cup sliced turkey pepperoni
- ¼ cup pizza sauce (or marinara)
Optional Add-Ins
- ¼ cup diced bell pepper (for crunch)
Seasoning & Cooking
- 1 tsp Italian seasoning
- Pinch of red-pepper flakes (optional, for heat)
- 1 tbsp olive oil or butter (for crisping)
Instructions
- Prep the filling
In a bowl, mix mozzarella, turkey pepperoni, bell pepper (if using), Italian seasoning, and red-pepper flakes. - Assemble
Lay one tortilla flat. Spread a thin layer of pizza sauce over it.
Sprinkle the cheese-pepperoni mixture evenly on top, then cover with a second tortilla. - Cook
Heat a skillet over medium heat and add a little olive oil or butter.
Place the quesadilla in the pan and cook for 2–3 minutes per side, pressing gently, until golden brown and melty inside. - Slice & serve
Remove from the pan, slice into wedges, and serve hot.
Additional Notes
- Extra Crispy Tip: Use butter instead of oil and press gently with a spatula.
- Protein Boost: Add grilled chicken or extra turkey pepperoni.
