INGREDIENTS:

COOKIES:

  • 1 & ¼ cup almond flour
  • ¼ cup coconut flour
  • ¼ cup Erythritol
  • ½ tsp. baking powder
  • Salt
  • 1 large egg
  • ¼ cup unsalted butter
  • ½ tsp. banana extract
  • ¼ cup freeze-dried strawberries
  • 2 tbsp. Unsweetened almond milk

CHEESECAKE DIP:

  • 4 oz. cream cheese
  • 2 tbsp. Erythritol powder
  • ¼ tsp. vanilla extract
  • 2 tbsp. Heavy whipping cream

COOKIES:

  1. Warm up the oven to Three-fifty degrees F and place the parchment on the tray.
  2. Stir the almond and coconut flour, baking powder, salt, & Erythritol in the dish with a whisk.
  3. Then we grab another dish and combine liquid butter, banana extract, almond milk, and eggs with a beater.
  4. Now we can mix both components & fold crushed freeze-dried strawberries.
  5. Form the smooth biscuit dough, and wait for 2 to 3 minutes.
  6. Then we can form equal-sized cookies, put them on the sheet, and bake the cookies for twelve minutes.
  7. We put the cookies on a wire surface to cool them and prepare the dip.
  8. Then serve these Strawberry Banana Pudding Cookies  with the cheesecake dip!

DIP:

  • Add Erythritol powder, cream cheese, vanilla, & heavy cream and blend to form the smooth dip.
  • Chill the dip for some time for a nice taste, and serve the cookies.
