Ingredients List:

Main Ingredients:

  • 1 lb ground beef (or ground turkey for a leaner option)
  • 1 packet taco seasoning Or use homemade: 1 tsp chili powder, ½ tsp cumin, ½ tsp paprika, ½ tsp garlic powder, salt & pepper to taste
  • ¾ cup salsa
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • 24 wonton wrappers
  • ½ cup refried beans (optional for extra creaminess)
  • ¼ cup sliced black olives (optional)
  • ¼ cup chopped green onions

For Topping (Optional):

Sour cream or Greek yogurt

Diced tomatoes

Fresh cilantro

Sliced jalapeños

Guacamole or avocado slices


Instructions:

1. Preheat and Prep the Muffin Tin:
Preheat oven to 375°F (190°C). Spray a standard 12-cup muffin tin with nonstick spray

. Cook the Beef:
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add taco seasoning and salsa, and simmer for about 5 minutes, stirring occasionally.

3. Assemble the Taco Cupcakes:

Press one wonton wrapper into the bottom of each muffin cup.

Spoon in a small amount of refried beans (if using), followed by taco meat, then a sprinkle of shredded cheese.

Add a second wonton wrapper on top and repeat the layers: beans, meat, cheese.

Optional: Sprinkle olives or green onions on top for extra flavor.

4. Bake:
Bake for 15–18 minutes or until the edges are golden and crisp, and the cheese is melted and bubbly

 Add Toppings:
Let the taco cupcakes cool slightly, then remove from the pan. Top with your favorites—sour cream, chopped tomatoes, jalapeños, cilantro, or avocado slices

Additional Notes:

Tip: These are best served warm but can also be prepped ahead and reheated in the oven or air fryer to keep the shells crispy
