These might look like pancakes, but they’re not. Trust me, once you try them, your life will never be the same.

Ingredients:

Baking powder1 ¼ teaspoons
Baking soda½ teaspoon
Eggs2 large
Milk⅔ cup (skim, 2%, or whole)
Vanilla extract1 teaspoon
Salt½ teaspoon
Butter2 tablespoons (for cooking)
Cinnamon sugarFor topping (optional)
Maple syrupFor serving

Instructions:

  1. In a large bowl, whisk together flour, sugar, cinnamon, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together eggs, milk, and vanilla extract.
  3. Pour wet ingredients into dry ingredients and stir until just combined. Be careful not to overmix.
  4. Heat butter in a large skillet over medium heat.
  5. Pour ¼ cup of batter onto the hot skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve hot with cinnamon sugar and maple syrup.
