Ingredients

- 1 egg
- ½ cup flour (or oat flour for healthier option)
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 2 tbsp fresh parsley, chopped
- 2–3 tbsp oil (for frying)
Step-by-Step Instructions
1. Prep Vegetables
- Grate zucchini, carrots, and potato
- Squeeze out excess moisture using a cloth or paper towel (VERY important for crispiness)
2. Mix Batter
In a bowl, combine:
- Grated veggies
- Egg
- Flour
- Salt, pepper, garlic powder
- Parsley
Mix until well combined
3. Shape Fritters
- Form small patties using your hands
- Flatten slightly
4. Cook
- Heat oil in a pan over medium heat
- Cook fritters for 3–4 minutes per side
- Flip when golden brown
5. Drain & Serve
- Place on paper towel to remove excess oil
