Keto Avocado Brownies

Though traditional recipes are loaded with flour and sugar, this doesn’t mean these unhealthy ingredients are necessary. In fact, all it takes is a few simple swaps to make satisfying brownies that are keto-friendly and healthy.

Yields 8 servings of Keto Avocado Brownies

THE PREPARATION

  • 2 large eggs
  • 1 medium avocado
  • 4 tablespoon butter, melted
  • 4 tablespoon almond butter
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup erythritol/stevia blend
  • 1/3 cup cocoa powder
  • 1 teaspoon vanilla extract

THE EXECUTION

1. Pre-heat oven to 350F. Prepare ingredients as needed.

2. Line a loaf pan with parchment paper and set aside.

3. In a food processor, combine all of the ingredients.

4. Pulse together until smooth, for about 30-45 seconds in total. Try not to overmix as the final product will become cakey if you do.

5. Transfer the batter to the loaf pan and bake for 25 minutes or until the edges begin to separate from the side.

6. Remove from the oven and let cool for 10-15 minutes. Slice into squares and store leftovers in an airtight container in the fridge for up to a week.

Makes a total of 8 servings of Keto Avocado Brownies. Each serving comes out to be 177 calories, 15.3g fat, 2.7g net carbs, and 4.5g protein.
