Ingredients:

  • 10 large eggs
  • 1 cup cottage cheese (full fat)
  • 1 cup shredded mozzarella cheese (full fat)
  • 1/4 cup melted butter
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 tablespoon baking powder
  • Salt and pepper to taste
  • Optional: Fresh herbs (such as parsley or dill) for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
  2. In a large bowl, beat the eggs until well combined.
  3. Add the cottage cheese, shredded mozzarella cheese, melted butter, almond flour, coconut flour, baking powder, salt, and pepper to the bowl. Mix well until all the ingredients are fully incorporated.
  4. Pour the mixture into the greased baking dish, spreading it evenly.
  5. Bake in the preheated oven for about 30-35 minutes or until the top is golden brown and the Banitsa is set.
  6. Remove from the oven and let it cool slightly before serving.
