Carnivore Chilled Custard Bites

Ingredients List:

  • 4 egg yolks
  • 1 whole egg
  • 1 cup heavy cream (raw or pasteurized, no additives)
  • 1/4 cup unsalted butter (preferably grass-fed)
  • 1/2 tsp vanilla extract (optional; omit if strict carnivore)
  • Pinch of salt
  • Optional: 1 tsp beef gelatin (for firmer, biteable texture)

Instructions:

Prepare the Custard Base:

  1. In a medium bowl, whisk together egg yolks and the whole egg until smooth.
  2. In a saucepan, heat the cream and butter on low until the butter melts and the mixture is warm (do not boil).
  3. Slowly pour the warm cream mixture into the eggs while whisking to temper and avoid scrambling.

Cook the Custard:
4. Return the mixture to the saucepan and cook on low heat, stirring constantly, until it thickens slightly and coats the back of a spoon (about 8–10 minutes). Do not boil.

5. Dissolve 1 tsp beef gelatin in 2 tbsp cold water. Let it bloom for 5 minutes, then stir into the warm custard until fully dissolved for a firmer texture
